Concho y Toro Casillero del Diablo Sauvignon Blanc 2008This wine was clean, bright and fresh as a summer’s day.  It had classic sauvignon flavors, a tart citrus  vibe.  The color was light straw.

The first and last glasses were drunk without food, and the acid was really a bit too much for my palate.  The second glass I paired with a California avocado, and it made the world of difference.  The lipids from the avocado muted the wines acid profile and it became a tremendous glass of wine.

The second day I paired it with a Vermont Cabot cheddar and a baguette, and it was delicious.  Concho y Toro suggests pairing with ceviche, oysters, or sushi.

The alcohol is 13.3%.  The closure is a screw-top.  This is a Chilean wine from the Central Valley.  It was a wine sample provided by the trade organization, Wines of Chile.  It is imported in the USA by Banfi Vintners.  The suggested retail is $12.  Trader Joe’s carries the Casillero del Diablo line and it’s about $8-9 actual retail on the West Coast.
