Here’s a thumbnail sketch — as a military brat, he moved a lot as a child. As a Wall Street financial analyst the wine bug bit, and Mack decided to pursue his passion for wine. Working as a sommelier in Houston, he was awarded Best Young Sommelier in America by the Chaine des Rotisseurs, which led to the opportunity to work at Thomas Keller’s French Laundry, and Per Se. Mouton Noir, or the “black sheep” was Mack’s nickname when he was working in New York. It’s a reference to the renowned French Château Mouton Rothschild which was poured with frequency, and he says he did things a “little differently” than how procedures were done in the Keller empire. In addition, Mack diplomatically points out, “There aren’t a lot of people who look like me in the biz.” The Mouton Noir moniker stuck and launched a brand.

As a bootstrapped start-up, Mack didn’t have a lot of capital to spend on design, so he learned on the fly, and designed eye-catching labels that didn’t look like the ones that came before. Besides the wine labels, he has designed a line of t-shirts with playful slogans like Barolo Kings or Run DRC (which got Mack a cease and desist letter from Domaine de la Romanée-Conti) and launched a creative agency, Get Fraîche Cru. Mack is on the road more than half the year, but managed to create “Small Thyme Cooks: Culinary Coloring and Activity Book” which enlisted some big names and rising stars in the restaurant world to create an irreverent coloring book, a portion of which benefits the Charlie Trotter Culinary Foundation.

But don’t let the playfulness fool you. These aren’t silly wines. These are solid wines. The Mouton Noir Oregogne (Rouge) is a beautifully crafted, well-integrated pinot noir, with a mesmerizing nose of cherries and summer flowers with a palate of dark red fruit, tack-room and earth.

Wine Harlots love pairing salmon with pinot noir, but here’s a twist — Brown Butter Citrus Salmon Tacos to make the traditional pairing fresh again. Or to be Mouton-thematic, try Lamb Lollipops with Rosemary, Garlic & Dijon.  The music match is the punk-anthem “I Believe in Miracles” by the Ramones from the album Brain Drain.
