“All our progress is an unfolding, like a vegetable bud. You have first an instinct, then an opinion, then a knowledge as the plant has root, bud, and fruit. Trust the instinct to the end, though you can render no reason.”  — Ralph Waldo Emerson

Summer is reason enough to drink rosé, and Les Deux Rives Corbières Rosé 2010 is a great summer quaffer. It’s a pale blush color with subtle notes of strawberries and raspberries with a nice acid balance. Shellfish is a great pairing for rosés, for us the perfect pairing is from Saveur, who shares Chef Jeremy Marshall of Aquagrill in New York City’s Lobster & Avocado Salad. The music match is “Summersong” by the Decemberists from the album Crane Wife.

The details: 12.5% alcohol. Synthetic capsule closure. Appellation: Corbières in Languedoc. Varietals: syrah 40%, grenache 40%, cinsault 20%. Actual retail runs about $10 USD. Imported by Pasternak. This was a media sample kindly provided by the importer.
